I am considering converting my 1988 CBR1000FJ into a cruiser style, to achieve a better riding position for my dodgy knees. Is this possible and how would I best go about it?

I've thought of that myself, but looking at the rear suspension, I don't think I could easily modify the frame to lower the seat far enough for my 27" legs :-)
I really do like the idea of having the exhaust under the fender and completely out of the way for large hard bags for touring, but that might just be the later models that are that way.
Moving the pegs and foot controls wouldn't be hard at all. It probably could be done without even having to get any special parts cast or welded, although that isn't all that expensive these days. Some aluminum bar and plate stock and a drill and hack saw...
Fabricating and attaching mounts for forward pegs might be a little tricky if that year uses the engine as part of the frame.
Changing the handle bar mounts might require new castings, but probably you could cut and modify some from another bike and custom cables and hoses are readily available.
All things considered, I expect getting a comfortable seat made for the different riding posture, would probably be the most difficult part of the job.
