I have 2 batteries that I need to put a battery tender on for the winter.  I only have one battery tender, however.  Would it be better to set up the batteries in series or in parallel?  Am I risking burning the house down?

Do NOT put the batteries in serial OR in parallel.  Period.

Buy a second charger.  If a charger only has one set of leads, that means it's only designed to charge ONE battery.  No exceptions.

You won't burn down the house, but, if 1 of the batteries is weaker, the other will be getting discharged by the weaker battery then hit with a charge far more than it needs, and may start breaking down. Most likely scenario, you end up with 2 mediocre batteries by spring.
If you don't want to buy a 2nd charger, there is an easy solution. hook clips to both batteries so you can plug the charger into 1 or the other (polarized connecters - available at Radio Shack- work pretty good), plug in 1 for 4 days, the 2nd for 3, then the 1st for 3, then the 2nd for 4. Repeat until spring. You'll get most of the benefit of a trickle charger on each.
