Here is what I use:
jackets: Fieldsheer "Drifter" model for colder weather and temps up to about 75-80. When things get hot 'n sticky I pull out a TourMaster "Draft" mesh jacket with CE armor in shoulders/elbows and a large back pad.
Helmet: I just bought a new HJC Symax II modular and love it. I also have a Fulmer half-helmet if it's REALLY REALLY hot outside, but most riding will be done with the HJC.
Gloves: For hot weather I use a pair of River Road "Sturgis" gloves. Gel pads in the palms take the vibration out of the bars.
Pants: Just levis for now, although I'm about to order a pair of Fieldsheer "Mercury" textile pants for cold weather.
Boots: Redwing 969's (now discontinued) although their 967's are identical except for the steel toe.

Yes, that is what you want to get -- helmet, jacket, pants, boots and gloves. ATGATT -- All of The Gear All of The Time: wear it, no matter how hot it is. And if it's too hot to wear it, then don't ride.
There is no one company that makes THE best gear. First make sure the stuff is high quality (see the Accessories + Gear section for articles on what to look for). Second, it has to fit you right. Loose fitting gear is never good. All the gear needs to be close fitting but not tight. If it's loose, and you hit the ground, you can still get friction burns and the pads/armor protection will move off of the body parts they're designed to protect.
And make sure you take the MSF New Rider Course or something similar, too.
